Ristorante and Caffé embarks on a new chapter, concepted in partnership with top Four Seasons chefs
Four Seasons Hotel Los Angeles at Beverly Hills unveils a new culinary direction for its award-winning signature restaurant, Culina Ristorante and Caffé. A staple in the Los Angeles dining scene for more than a decade, this reimagination marks the beginning of a new culinary era for Culina, a restaurant revered for its iconic Sunday brunch buffet, and known for serving as a backdrop for Hollywood power lunches while catering to the discerning palates of Hotel guests and local residents.
Drawing inspiration from the charming coastal towns dotting Italy’s Mediterranean and Adriatic regions, Executive Chef Mitch Austin collaborated with top Italian chefs across the Four Seasons portfolio to concept dynamic new menus for breakfast, lunch, and dinner.
Blending California's seasonal bounty with a selection of DOP products sourced directly from Italy, the new menus boast artfully crafted dishes that capture an authentic flavour profile. Each plate celebrates California's abundant waterways and diverse agriculture, showcasing the vibrant essence of local ingredients harmoniously paired with the finest Italian imports.
“When we set out to re-envision Culina, our intent was to introduce a new concept and menus that were deeply rooted in Italian heritage and tradition, and to capture the essence of the Italian Riviera in Los Angeles,” says David Wilkie, General Manager at Four Seasons Hotel Los Angeles at Beverly Hills. “The reimagination is an authentic love letter to coastal Italy, presenting refreshing new menus and an enriched ambiance that guarantees an unforgettable culinary experience for guests and locals alike.”
The new menus feature a refined selection of sophisticated yet approachable plates, with signature offerings including artisanal pizza prepared in an outdoor, Neapolitan-style oven; a crudo bar serving sustainably sourced tuna, seabass, hamachi, salmon, and king crab; and handmade pasta. A sampling of other noteworthy plates include:
- Carciofi Fritti - Fried Artichokes, Lemon and Caper Aioli
- Crudo Royale - Assortment of Crudo, Selection of Accompaniments, Petrossian Caviar
- Risotto ai Ricci - Acquerello Risotto, Santa Barbara Sea Urchin, Prosecco, Grapefruit, Chive
- Paccheri All’Aragosta - Lobster Paccheri, San Marzano Tomato Sauce, Fresh Basil
- Costata Fiorentina - Grilled T-Bone Steak, Tuscan Cannellini Bean, Grilled Radicchio, Balsamic
Complementing Culina’s fresh coastal Italian cuisine is an extensive wine list, comprised of more than 500 labels centred primarily on Italian producers, while also showcasing kindred Californian wine. Ranging from classical and known to vanguard and emerging, the bottles have been carefully curated to ensure that every sip aids in supporting environmentally responsible viticulture. Shaken or stirred, Culina’s cocktail menu further enhances the culinary journey, infusing the spirit of coastal Italy into the heart of Los Angeles. Creative libations are prepared with bright, fresh ingredients with signatures such as the Amalfi Spritz, featuring homemade limoncello, Aperol, prosecco, fresh basil, and club soda.
The reimagination of Culina’s menus is aptly timed to the unveiling of the festa del limone, a seasonal culinary experience that will bring the allure of the Amalfi Coast to Los Angeles. For the month of April, Culina’s alfresco patio has transformed into a lively lemon grove oasis, offering seasonal dishes, cocktails, and desserts that celebrate the vibrant citrus notes of the Santa Teresa lemon, paying homage to the beginning of Amalfi lemon season in Italy.
The menu, available daily for lunch and dinner, presents an array of citrus-forward plates such as Tuna Crudo with Santa Teresa Lemon, Pistachio and Castelvetrano Olives; Lemon Arancini; Pasta al Limone with Handmade Spaghetti, Blue Crab, Rutiz Farms Fresh Peas, and Sourdough Crumb; and Roasted Artichoke Pizza with Santa Teresa Lemon, Fior di Latte, Spring Onion, and Grana Padano. Guests are also invited to join in Antipasti Hour, held from 4:00 to 7:00 pm, Thursday through Saturday, where a chic, roaming antipasti cart serves a selection of Italian delicacies including local and imported cheeses and cured meats, marinated vegetables and olives, focaccia, taralli crackers, and more. Enhancing the Amalfi Coast ambiance is a stunning centrepiece bar setting envisioned by famed Artistic Director and Floral Designer Jeff Leatham. Nestled beneath a lush arch adorned with fuchsia bougainvillea and zesty lemon accents, the outdoor bar transports guests to coastal Italy with its Amalfi Spritzes crafted from Malfy Gin, Campari Sodas, and the signature Testa Di Moro cocktail, blending Botanist Gin, homemade limoncello, Limonata, and candied lemon.
